The video is self explanatory. Nevertheless, I can't explain in writing too as I have no idea what goes into the rice paper. Don't try to be too academic. Life should be simple.
This is another use of the rice paper, to eat it together with elephant fish.
If you want to know how the elephant fish looks like, do a google search. I feel it is not right to copy and paste someone's else image here. I don't have a copy myself.
